Makes: 6 large pieces
Preparation time: 1 hour

Ingredients:
1/2 cup (110gm) Unsalted/White Butter
1 cup (250gm) Semisweet Chocolate Chips
2 large Eggs
1/2 tbsp Instant Coffee Powder
2 tsp / 1 bean Vanilla Extract
1/2 cup (150 gm) Superfine Sugar
3 heaping tbsp (55gm) Maida
1 tsp Baking Poder
1/3 tsp Salt
1 cup Walnut pieces

Preheat oven to 170°C/350°F. Grease and flour an 8” x 8” pan.

Melt together the butter and chocolate chips on top of a double boiler. Stir together the eggs, instant coffee, vanilla and sugar. Combine the warm chocolate and egg mixture and cool to room temperature. Stir the flour, baking powder and salt.

Fold the maida mixture into the chocolate mixture. Toss in the walnuts and pour into the prepared pan. Bake for about 30 minutes, or until tester just comes out clean.

Halfway through the baking, tap the pan against the oven shelf to allow air to escape from between the pan and the brownie. Do not overbake! Cool thoroughly and cut into squares.
