Serves: 6

Ingredients:
4-5 Shallots - finely chopped
2 cups Spinach  - chopped and blanched
20 Mushrooms - sliced
9-10 strips of Lasagna Pasta
1 cup Milk
2 tbsp Butter
1 tbsp Maida
Salt
Pepper
1 cup Mozzarella - grated
Water to boil pasta

To prepare the filling: in a large pan, heat 2 tbsp olive oil and sauté shallots. Add the spinach and continue to sauté until all the water from spinach dries up. Similarly, sauté mushrooms in a separate pan. Combine the mushrooms and spinach and season with salt and pepper.

To prepare pasta, boil lasagna sheets as per instructions on the packet.

To prepare white sauce: boil milk in a pot. In a separate pan, melt butter, add maida and sauté for a minute. Slowly add boiling milk and whisk vigorously to avoid lumps. The sauce is ready, when the consistency coats the back of a spoon. Season the sauce with salt and pepper.

Now, assemble the pasta in a baking dish: drizzle some olive oil on the base. Lay three strips of lasagna side by side. Spread half of the spinach and mushroom filling. Spread a third of the white sauce. Cover with another layer of pasta, spread the filling and sauce as done previously. Lay the final layer of pasta and spread the remaining sauce. Sprinkle the cheese evenly and bake at 150°C until the cheese melts. Serve immediately!!
