Serves: 6
Preparation time: 30 minutes

Ingredients:
Olive Oil
Yellow Onion - chopped
Tomatoes – skinned and diced
Potato – diced
Zucchini – diced
Broccoli – diced
4 cups Water
Salt
1 tbsp Pesto
1/2 cup Spaghetti – boiled
Parmesan

Heat 1 tbsp olive oil in a soup pot and lightly sauté the onions. Add all the remaining veggies, tomatoes, potato, zucchini and broccoli. Add water and 1 tsp salt, boil until veggies are just tender. Add pesto and balance salt to taste. Add spaghetti and sprinkle parmesan just before serving.
