Serves: 6
Heat 1 tbsp olive oil in a soup pot and lightly sauté the
onions. Add all the remaining veggies, tomatoes, potato, zucchini and broccoli.
Add water and 1 tsp salt, boil until veggies are just tender. Add pesto and
balance salt to taste. Add spaghetti and sprinkle parmesan just before
serving. |
