Ingredients:
Water for Pasta
Salt
Olive Oil
1-1/2 cup (125gm) Bow-Tie Pasta
1/3 cup Pesto Sauce (recipe follows)
2 medium Tomatoes - Fleshed and diced
2 tbsp Parmesan Cheese - grated
2 tbsp Pine nuts
Green Salad
Boil water for pasta and add salt and olive oil. Boil pasta
as per instructions on the packet. When ready, drain the pasta and toss with pesto sauce,
Parmesan and pine nuts. Cool slightly and add the tomatoes. Refrigerate until
ready to serve.
Serve on a bed of green salad leaves.
Pesto Sauce
Makes: 1 cup
Preparation time: 5 minutes
Ingredients:
4 cup Basil Leaves
1/2 cup Olive Oil
1/4 cup Pine Nuts
1/2 cup Parmesan - grated
4-5 cloves Garlic
Grind all the ingredients into a paste using a food
processor. Use immediately or refrigerate for use later.
